What is behind isolate and hydrolysate?

Protein isolate is produced from concentrate through additional filtration steps. This raises the protein content to over 90%, while fat and lactose are almost completely removed. For people with severe lactose intolerance this can be an advantage, and in certain applications a very high protein content does make sense, but important micronutrients are lost in the process.

Protein hydrolysate is processed even further – through enzymatic cleavage, the protein is already broken down into small peptides. The idea is that this allows for faster absorption, but in reality native whey protein with its naturally occurring amino acids is already very well absorbed by the human body. And hydrolysate often tastes bitter and artificial.
